SpringHaven Croft is dedicated to the idea that it is possible to grow healthy food efficiently enough that they can support their own needs and have enough left over to provide income to support their farm.  Through a variety of products and teaching seminars and providing a home to visit and learn, their goal is to live at peace with their neighbors and community and extend the invitations to live closer to the Earth, to God, and to each other.

When searching for a farm name, they walked the land and looked for characteristics that stood out.  The first one - the artesian spring that gives water to three households and has a constant flow, they knew it had to be part of their name.  From their Scottish/ Welsh ancestors, they knew that a "croft" was a small tenant farm, generally, under 5 acres, that had a few animals and supported a single family.  They believe that God is the owner of all on this Earth and look to Him as the owner of their farm - so Croft fit as well.  Finally, they wanted the land to be a haven, a refuge from the rush and haste and anger of the world, not just for them but for their family and friends and neighbors.  Therefore SpringHaven Croft became their officially licensed name. 

As Dan's retirement from the electronic's industry approached, Jeanette decided that he would need a hobby.  So, she got Dan his first bee set-up.  Dan was already making maple syrup for the family, so the step to a new source of sweetness for Jeanette's cooking was welcome.  They looked to their interests to see what could be done to make up a cottage industry to keep them busy and provide added income for retirement.  Jeanette was interested in writing and fibers from start to finish.  Dan liked bees and inventing.  They both like animals and nature study.  For years they had talked about starting a small farm.  Following an interest, Dan started a piano tuning business on the side.  Jeanette started a counseling business after taking early retirement from child protection.  And in early 2012, they started a small church in their home.  At the end of that year, they started talking to Harvest about what they could provide.

In 2013, Jeanette's sister, mom, and dad died of natural causes, one after the other, a few months apart.  In settling the final will, Jeanette paid money she had saved up to settle her dad's estate and in return, got the deed to his 3.5-acre homestead.  Combined with the 1.5-acres that they already had, it provided the platform for them to start working on their dream.  Her dad's farm was in terrible shape, but little by little they tore down rotted buildings, hauled out the garbage, put up fences, built a new stable and chicken house, built raised beds and worked on the farmhouse.

SpringHaven Croft produces alpaca products, honeybee products, canaries, Pomeranian dogs, blueberries and strawberries, and eggs.  They also offer seminars on subjects such as religion, fiber or gardening practices.  Dan offers piano tuning and Jeanette offers counseling services.

Healthy Egg Muffin Cups

Source:  Show Me The Yummy
Serves: 12
Prep Time: 10 minutes
Cook Time: 15 minutes
Supplies: 12-slot muffin tin

  • 1 tablespoon olive oil*
  • 1 cup red pepper measured after chopping
  • 1 cup green pepper measured after chopping
  • 1 cup yellow onion* measured after chopping
  • 2 cups baby spinach - roughly chopped measured/packed before chopping
  • 1 cup mushrooms measured before chopping
  • 2 cloves garlic* minced
  •  salt to taste
  • 4 whole eggs*
  • 4 egg* whites
  •  hot sauce* optional for drizzling on top!
  1. Preheat oven to 350 degrees F.
  2. Grease a standard non-stick 12-slot muffin pan with cooking spray and set aside.
  3. Heat a large non-stick skillet over medium heat.
  4. Once hot, add in oil, red pepper, green pepper, and onion.
  5. Saute 5-7 minutes, or until peppers are tender.
  6. Add in spinach and mushrooms and cook for an additional 2 minutes.
  7. In the last 30 seconds, add in minced garlic.
  8. Season with salt and remove from heat.
  9. Crack eggs/egg whites into a large 4 cup measuring cup and whisk together.
  10. Stir in cooked veggies.
  11. Pour the egg/veggie mixture evenly into the prepared muffin pan.
  12. Bake for 15-20 minutes, or until the tops are firm to the touch and eggs are cooked.
  13. Cool slightly and serve immediately!
  14. Leftovers can be stored in an airtight container in the fridge for about 4 days.
  15. These may also be frozen.
  16. To reheat, pop them in the microwave until warm.

Say Cheese! How What You Eat Affects Your Smile


Face it: We live in a selfie-centric society that, combined with our health-driven lifestyles, makes a smile more important today than it has been in the past. The Stainers

For many of us, a cup of coffee is essential to starting the day off right. For your teeth, it sets the stage for stains. And for those who like to have a glass of red wine at night, you're also ending your day with a noted tooth stainer. Other culprits can include tea, sports drinks, curry, berries, tomato sauce, and candies.

The Eroders

Your enamel is not only vulnerable to obvious acids like citrus fruits, vinegar, and white wine, but sugar can have an acidic effect on your enamel as well. Plaque bacteria use sugar to produce acid, which then eats away at tooth enamel. This means the sodas, juices, sports drinks and candies

-- basically anything with sugar in it -- can be eroding your enamel.

The Breakers

It goes without saying that biting into something very hard can damage your teeth. Similarly, something extremely chewy can pull on teeth and cause damage or loosen a crown. The foods to be wary of include: hard candies, chewy candies, ice, popcorn seeds and corn on the cob.

The Driers

That horrible "cotton-mouth" feeling after you've had a couple of drinks is actually bad for your teeth. When saliva flow is reduced, you stand a greater risk of tooth decay, oral infections and possibly gum disease. Triggers that can cause dry mouth include alcohol, coffee, tea, caffeinated beverages and any salty foods.

Don't despair! There are plenty of food options that actually promote tooth strength, whiteness, and freshness. Feel free to indulge in fiber-rich fruits and vegetables that stimulate salivation. Cheeses, milk, yogurt and other dairy products are packed with calcium, phosphates, vitamin D and other minerals that promote all-over health. Also, calcium mixes with plaque and sticks to your teeth, providing protection from acids and rebuilding enamel on the spot. Green and black tea (without sugar added) can slow down tooth decay and gum disease by suppressing bacteria. Use fluoridated water to brew your tea, and you've just added a powerful decay prevention agent.

About Clint, our store manager
Clint became the store manager of Harvest in 2013, taking over for Cheryl McKee.  He has 20+ years of retail experience, much of it in management.  In the past, he has worked for "big box" retailers to smaller convenience stores.  He has even worked a little bit of time at some restaurants.  His philosophy is always to put the customer's needs first and to treat everyone like family.  He lives on a small farm outside of Fredericktown with his wife of 20 years and his two kids.  Living on a small farm has allowed him to have experience with a variety of livestock, from various fowl to goats, llama, pig and steer.  He brings all of these areas of his background together in managing Harvest and bringing in vendors that supply the customers needs.
